Maybe it's a silly question, anyway.... I just wonder why JQuery UI doesn't provide a table plugin/component out of the box, but you have to choose among third party ones.

There are thousands of possible widgets jQuery UI could have chosen to include or not include. Tables was on that they chose not to include. Who knows, may they will some day.

That's right, of course they made their choices, but choosing not to include a presumably widely used component like a DataGrid sounds rather strange....oh well, never mind.

As none of the jQuery UI contributors post here, we can only guess. The answer I gave above is one that I surmised while working with the jQuery and jQuery UI teams while working on jQuery in Action (2nd Ed). That's probably about the closest answer you are going to get without asking one of the team members themselves.

This post is about datagrid in Jquery UI, it is promising even if is a bit old. Maybe they are working on other fronts (stability, bug fixing and so on...)

I, personally, would not be holding my breath. Meantime, I'd be trying to use one of the established datatanles imementations.
 
With a little knowledge, a cast iron skillet is non-stick and lasts a lifetime.
