For the Part I of the exam do i need knowledge about all the Tags in the deployment descriptor of the EJB and the Web Application (WAR)

You do for the IBM 483 exam, but the SCAE exam is not that detail oriented. Still, there's not really that many tags, and with a lot of products you are still better off if you can build the XML descriptor by hand. So even if it is not required on the exam, it is a good skill to have.
