The requirement says one (could be a big one). But I saw some people created a few of them?
Thanks in advance.

Create as many as you need...
I started off with the intention of creating three separate class diagrams and finally ended up putting them together into one. I don't think it matters either way.

In my design I had many class diagrams. By many class diagrams i mean
- A Class diagram to map the Controller Classes
- A Class diagram to map the DAO Classes
- A Class diagram to map the client swing UI
Classes
- A Class diagram to map the Entity bean Classes
- etc etc
the number of classes or class diagrams depends on how you design your system or what details you want to show in the UML diagrams.
