Hi!
Has anyone done part two using UML 2.0? I don't see where Sun has specified which version of UML to use. Does it matter? The reason I am asking is because I bought the book UML Distilled Third Edition which covers UML version 2.0.
Can someone help?

It doesn't matter.
AFAIK, UML2.0 has new types of diagrams but not a lot has changed with regard to Class, Sequence and Component diagrams required to pass the SCEA test. Of course UML2.0 has also introduced some new constructs that can be used in these diagrams.
The only requirement is to make your diagrams 100% UML compliant. If you want to play safe, do not use any UML2.0 constructs unless it is inevitable. Although we can assume the evaluators to be upto date with their UML2.0 knowledge, I prefer simplicity over using latest and the greatest UML features.
