is that sentence a field without a transient modifier must be annotated as
@Persistent to be stored in the database ture?

As per the spec:

All non-transient instance variables that are not annotated with the Transient annotation are persistent.


which means that unless you have a @Transient annotation on top of a field, that field is by default considered persistent.
