Have you looked at the Web Services FAQ yet?

Web Services are a broad topic. Are you interested SOAP or REST web services? Are you interested in a particular toolkit (Axis (1.x or 2.x), JAX-WS on GlassFish, Apache CXF, Restlet, etc.)? Are you interested in building a java-based web services interface based on one of these toolkits? Or are you interested in language independent Service-Orientation?

Currently there are some Sample Chapters of SOA Principles of Service Design (amazon US) available that deal with Service-Orientation (but without reference to any particular implementation toolkit or language).

However if you want a quick and simple hands-on introduction to a simple SOAP-based web service using Axis 1.x then this oldy but goldy is usually recommended.
