hi,
what kind of excel files do you need ?
wont csv (comma separated values) files do ?
csv files can be read by excel but you cannot store formating, colors, functions and so on..
just put your values one by one separated with a ',' for every new row start a new line.
i think there is also an API from some 3rd party producer. search the javaranch forums for this, perhaps youll find it.

You can use Apache POI. I prefer CSV files though as they easier to work with.

You can use JXL - Java Excel API - A Java API to read, write and modify Excel spreadsheets

You can visit their site @ JXL Site
