The job interview goes in both directions. The interviewer is looking for the best candidate for the job, and you are looking to learn about the company and whether you actually want to work for them.
If you simply concentrate on your part (learning about the company), I don't think you'll have much time to be nervous. Besides, if the interviewer acts like a
jerk and throws a guantlet at you, do you really want to work for/with him/her?
As for the questions, just be totally honest. If you don't know the answer, let the interviewer see the thinking process in order to get to the answer. IMHO, it is more match making than
test taking. If it is not a match, it doesn't really matter how much of the subject you know.
