Hi,
you can find a list of BEA customers at:
http://www.bea.com/customers/index.shtml , and this is only from BEA.
About knowing if a site or application is using ejbs, you don�t have how to know that as ejbs are used to build the business logic and the front end can be implemented using different tecnologies.
 
It is sorta covered in the JavaRanch Style Guide.
