I ever attended interview where I was given a list of questions, quite tough. You should at least know how to write basic EntityBeans with corresponding interface implemented.

1. UML Diagrams
2. Deployment Descriptors
3. Difference between stateful/stateless Session Beans and BMP/CMP Entity Beans.

And also J2EE architecture - how EJBs fit into the bigger picture and some of the well-known patterns that can be applied.
