Regarding books, here's a nice shopping list (I disagree only about a couple entries on that list)

Sun's J2EE link can be a good starting point.
http://java.sun.com/j2ee/index.jsp ( there is a tutorial link there that you can use)
Depending on the availability of a application server(tomcat/weblogic/websphere) you can also refer to the getting started material to get upto speed.
I would also suggest the following as reference and initial learning books.
1) EJB -- Ed Roman
2) JSP -- Duane Fields.
3) J2EE pattens -- Deepak Alur.
