In a J2EE application how do we know which versions of Servlet/ J2EE/EJB are being used ?

The versions of individual specs are specified by the J2EE spec. You can look at the J2EE pages on Sun to find out the versions for 1.3 or 1.4 -- whichever you care about. (They aren't chosen by the server, if that's what you are wondering.)
