What does Glassfish bring to the table in the area of security features? Does it support WS-Security, and are there "success stories" showing implementation of WS-Security features?

Have a look at Metro, the WebService Stack from GlassFish. Yes, it does support WS-Security.

Web services can be configured to be accessed only by authorized entities. This is done by modifying the service's deployment descriptor.

This is discussed in detail in chapter 10 of the book.
