What exactly are Servlets?

After reading Sun's tutorial on Servlets, it seems to me that they are just classes with two methods doGet and doPost. Yes they can do form parsing and receive and set headers and cookies.
But is there anything more to Servlets than just that?
In what sort of a context would they be used in a real world application.
