The Servlet Specification has a section outlining the differences from previous versions.

Basically no new functionality, but existing features have been improved.
Also, single threaded model is deprecated and eventually get phased out.

--Increased (improved?) integration with other J2EE specification and components.

--Filtering of RequestDispatchers and Error pages.

--Event listeners for requests and request attributes.

--Methods to query client connection details.

--Improved internationalization methods.

--XML Schema definition of the deployment descriptor.

The Servlets FAQ links to articles describing the differences from the previous version for most versions of the Servlet API.

It is sorta covered in the JavaRanch Style Guide.
