I'm creating a jar file and want to know how do you exclude certain subdirectories ? I have lots of CVS directories I don't want included in the jar file. Is there an easy way to do this using the jar command from a cli?

No.
Use ant.

From a UNIX-y shell, it's pretty easy (just use "find" and the appropriate predicates.) From Windows cmd.exe, I don't think there's any way to do it. Ant is, indeed, the recommended cross-platform solution.

It is sorta covered in the JavaRanch Style Guide.
