Where can I find in standard documentation (from Sun, IBM, etc.) a listing of class or instance variables for the standard Java classes. For example, where can I find that "length" exists for an Array.

The exhaustive Java API documentation is available in many places; here, for example.
Now, unfortunately, the example you've given is (as so often happens) a highly atypical one. The idea that arrays have a "length" member is completely unique -- there's nothing like it in all of Java. It's not something that's documented in the APIs, but rather, something that's part of the language definition itself. Most people learn this from a book, but the very hardcore go straight to the Java language specification.
