You can start with the HeadFirst SCBCD. I am not sure if it is updated to reflect the EJB 3.0 specification. Nevertheless, it will help you get acquainted with the basic concepts. Also, you would find the EJB 3.0 in Action book helpful.

This book is for EJB2.x, it will confuse you more than help you for the new exam. Check our list of recommended books in the FAQ. I think that EJB3 In Action is a very nice book.
