I'm considering entering the 21st century.

One thing I'm looking for is a way to synchronize specific directories on my hard drives. Am I correct in understanding that with Mobile Me, these directories need to be on your iDisk? In other words, you can't specify a list of other directories to sync?

What you can do is to synch your iDisk to your local systems. I don't think that it gives you finer granularity than that (at least not last time I checked).

There are other apps out there that do this, but last time I checked (a few years back) none of them satisfied. The landscape may have since changed...
