EE - Enterprise Edition
SE - Standard Edition
ME - Micro Edition

ME is for phones, handhelds, and other such devices with little memory. It is (more or less) a stripped down version of the SE.

The SE is the standard edition. It will probably do everything you need if you are new to Java.

The EE is the Uber-Java. It does (almost) everything needed for large scale, multi-machines spanning multiple network type applications. Almost without a doubt, it's overkill for what you will be doing for a while.
