I have some documents (contract, form...) stored in web server, how could I open and modify it without pain ?

In current solution, user could download that file and save it using Word, then modify it in the user's computer, after this, the new version need to be uploaded to server. Clearly, this solution is not good. How to improve it ?

What you are looking for is either a general source control system, or a specific document management system.

I suggest Google Docs.
