Since CX-310-091 covers annotations (EJB3.0), do I still need to remember the XML counterparts?

I hope not!
A lot of them are also easy to deduce from the name of the annotation, so that lowers the burden.
I can't 100% guarantee it, but I'd say you don't actually need to remember them. I didn't have any at my exam.
