How do you match all the characters within brackets but exclude certain things?

Pseudo-example:

Basically, all the Punctuation characters encompassed by \p{Punct} except for the % sign

I could, of course, write out all the \p{Punct} characters manually, but that's a crude solution. Is there a more elegant method?

Don't get me started about those stupid light bulbs.
