In tag logic:iterate, I have a text tag. If I edit the text in the textfiled, can the data be saved in the form?

All text tags (and others) that are enclosed in an html:form tag must map to attributes on an ActionForm, so the answer would be yes. Of course, each html:text tag would have to be named (property="..") so that it is unique.
