Lots! There was a slew of best practices material that wouldn't fit. I would also liked to have covered a few more frameworks. Other ripe topics include persistence mechanisms, more on JavaScript, security, etc. In fact, you may have noticed that the last chapter is titled "What's Not in this Book", to cover some of the topics that I feel are important that there was no room for. My original contract called for 450 pages. I finally stopped at 624!
