Can I read already pdf file and edit it using Itext

You can't edit a PDF, not with iText, not with any other tool.
Editing a PDF is not done.

You can however manipulate a PDF:
- you can stamp extra information on a page (even a watermark under the existing content)
- you can fill out a form
- you can add a digital signature
- you can encrypt it.
- you can assemble PDFs
- you can split PDFs
- ...
All of this can be done with iText.
