I see that Springsource have done a lot of job with NoSQL databases lately.
I see at Manning's website that chapter about databases is included in the book.
Are NoSQL databases covered in the book?

No, sorry. I don't cover any of the NoSQL options afforded by Spring. To be honest, I've barely even tinkered with those. Now that the book's almost done, maybe I'll find some time to tinker with those things that I've not tried yet.
