Maple Ribs and Wings
1 rack pork ribs, cut into 2-rib pieces
3 lbs
chicken wings, separated
2 c unsweetened apple juice or cider
1/2 c maple syrup
1/4 c vegetable oil
1/4 c soy sauce
4 cloves star anise
1 T cinnamon
1. Mix all ingredients but meats together in a bowl or large measuring cup. Be sure to mix thoroughly.
2. Place ribs and wings in a gallon-sized zip-lock bag, and pour marinade over. Close bag pushing out as much air as possible. Refrigerate overnight or up to 24 hours. I'd put it in a pan just in case any leaks spring.
2. Preheat oven to 400ºF.
3. Line a half sheet pan (or two smaller pans) with heavy duty aluminum foil. Don't skip this step or you'll be scrubbing the pans for hours afterwards. Really, do this!
4. Pour everything onto the sheet pan(s) and spread out into a single layer.
5. Bake for 1 and a quarter hours.
6. Enjoy with lots of napkins. Or wet wipes.
Notes: goes well with potato salad.
