I have started on my assignment and I seem to have ended up with quite a few enum classes, is this normal or am I going into too much detail? Do I need to show them or just have them mentioned in the domain classes?

I just mentioned them. I think that most of enums should be defined by designers, not by architects.

In my case i have shown enums using stereotype <<Enum>> in the class diagrams. I have used enums to represent various possible order statuses in my solution.
