This is a recipe that I developed over the past year. My goal was to come up with a chili recipe made from mostly pantry canned ingredients.

Bear's 3-Bean Yankee Chili

1 large onion, diced
1 can crushed tomatoes, 28oz
1 can diced tomatoes, 28oz
1 jar salsa, 16oz
1 lb beef, coarsely ground
1 lb pork, coarsely ground
2 cans whole green chiles, diced or use fresh
3 cans beans, various types
1 can tomato sauce
1 1/2 t garlic powder
1 1/2 t kosher salt
2 t black pepper
1 t chili power
1 t cumin
1 t Cavendar's Greek seasoning
1 c beef stock

1. Preheat oven to 300ºF.

2. Drain and rinse beans, chop chiles into bite-sized pieces.

3. Sauté onion in oil until just browned.

4. Add crushed tomatoes and saute until reduced to a paste and just beginning to brown on the bottom.

5. Add all remaining ingredients and mix thoroughly. Bring to a boil.

6. Put into oven for 1 to 1 1/2 hours.

Serve with cheddar, jalapenos and saltines. Add a dollop of sour cream if desired.

I have a great recipe for Texas Chili -- but there's more than one state, and more than one yummy chili style.
