EE:- Enterprise Edition:- This Java edition is specifically designed for enterprise applications/bussines where we have to deal with number of different servers with importance on security, transaction management etc.

SE:- Standard Edition:- This edition is for standard applications.

ME:- Mobile Edition:- This java edition is specifically designed for mobile phone platforms. Where more importance is given on memory management as there is limited memory resources in mobiles .

So basically JAVA has different editions for different requirements.

Actually, ME stands for Micro Edition (not Mobile Edition). Have a look at the Wikipedia articles for detailed information:

Java Platform, Standard Edition
Java Platform, Enterprise Edition
Java Platform, Micro Edition
