Sticky Toffee Pudding

If you're from England, particularly the north, you may recognize this food item.

My wife and I ate it all the time on our trips there, but since we live in North America we never have it at home. Until today, when it showed up at our Costco. It's even made in North America -- in Texas no less! (Actually it's made in Austin but that's still technically part of Texas the last I heard.) It was pretty good but it didn't match up to the leader in our Sticky Toffee Pudding Stakes, which we had at the Grasmere youth hostel.

This is indeed a classic British pudding - we love puddings here, they cheer us up on all those cold grey days (especially the summer ones). Why don't you make it yourself? It's really very easy and if you do it right it will stick to your ribs for a few days :-)

This time of year, it is all variations on apple crumble in the Ritchie household. That won’t last. Last winter, we were eating locally-grown Bramley apples until the end of February. This year there are fewer, and they will probably all be eaten before the beginning of November.

Low-cholesterol margarine (eg made from sunflower seeds) instead of the butter, and liquidised cashew nuts instead of the cream?
