You need to do one sequence diagram per use-case. I haven't seen your assignment but I think all have more than one use case. So that's a yes. :-)
I just started using Visual Paradigm and I have to say that I find it very efficient for drawing sequence diagrams. So far I was working with Poseidon, which works great, until you hit the sequence diagrams... Which are a straight-up nightmare. Both in version 6 and 8. I got to the point where I saved my work and restarted to get rid of strange GUI artefacts (mouse cursors stuck in wait state, etc), and I couldn't open my file anymore. This is where I cut my losses and switched to Visual Paradigm.
So yes, I just ran into the issue of the watermarks as well. I'm finding that the result is not acceptable, in the sense that I don't want to submit my diagrams with these watermarks. But what you can do, is do your assignment and then get a 10-day trial license for the commercial version to do generate the output with no watermarks.
