I don't know about books but the toolkits such as Jersey come with plenty of code examples.

study materials by Ivan Krizzan http://www.slideshare.net/krizsan and Mikalai Zaikin http://java.boot.by/ocewsd6-guide/ are amazing and free. the book named Java Web-Services up and running by Martin Zalin is one damn good book.
