Are there any special upgrade instructions I need to follow to upgrade to the latest rev from 2.1, or should it just be a replace of the jars & classes?

Also, is there another rev coming any time soon? Should I just hold off till then?

The instructions are described in each download package. There are .txt files there with all the information.
