Swing is a GUI framework, so find something that appeals to you and your interests.

You aren't interested in anything which could be implemented in Swing? And you can't imagine an application which might be written in Swing?

Okay. Write an application which keeps track of the people in a small office along with their phone numbers (so that the management can call them at home if there are problems).
