I don't have a mac, but I'm sure someone has to set them. I believe Mac's come with java pre-installed, so i'm sure things like the path for the java.exe is set for you before you ever even turn it on.
If I recall correctly, Macs use a version of *nix, underneath, which would clearly have environment variables.
