this is a big field and I'd suggest that you decide on which specific technologies you may want to undertake.
Java EE Night Hacks is one book that I'll recommend for getting started but since you are looking for an application from scratch, I'll suggest Learning play framework for you.

I have another question about using Spring with Struts, do you think is a good thing or i should use Spring with Spring MVC
