What is the best way to go about to creating dynamic shadows / a shader for my 2D java game? Is LWJGL an option? What methods have you used that you would recommend? Any tutorials to learn how to make/use them?

I'm not saying this is the best way but it's the way I used in my 2D shooter game Alien Swarm. I just created a couple of transparent shadows in paint dot net and then calculated a position on the ground depending on the xy position of the alien. It sounds like it shouldn't work but it actually looks OK while playing the game.
