How is this book organized?
Is it built form the beginner topics or are the topics mixed?

On the official page of the publisher you'll find the table of contents. So I think it's safe to say, the study guide starts with beginner topics and more complex topics are added as the book progresses. And this study guide aims for the entry-level OCA 8 exam, so it requires no prior Java knowledge.
