I'd like to define my datasource + mysql connector inside my project instead of inside standalone.xml.

Is this possible ?

I'm not sure if it's possible to define data sources inside the application (EAR, WAR) itself, but it is possible to put it in separate XML files and deploy those. See https://docs.jboss.org/author/display/WFLY8/DataSource+configuration, then the "Deployment of -ds.xml files" subsection. It links to the XSD you'd need to adhere to.

It is sorta covered in the JavaRanch Style Guide.
