Should I put it as "Java SE 8 Programmer I" as given in the Oracle site or as "Oracle Certified Associate, Java SE 8 Programmer "?
Or what is the correct way to write it?

In order to get the Oracle Certified Associate, Java SE 8 Programmer certification, you need to pass the Java SE 8 Programmer I exam. Since you passed the Java SE 8 Programmer I exam, you are now an Oracle Certified Associate, Java SE 8 Programmer (and that's what you should put on your resume).

As Roel said, put it as Oracle Certified Associate, Java SE 8 Programmer . That sounds associate as well as Programmer. 
 
It is sorta covered in the JavaRanch Style Guide.
