I wonder if someone would be good enough to let me know the correct syntax to set the text colour in my xml file, that I call as a background from drawable.  It currently looks like this -

A shape is something that is drawn, not a text, so it doesn't have a text color. See https://developer.android.com/guide/topics/resources/drawable-resource.html#Shape for what is available.
