Hello again:

I'm working on Chapter 15 OCP 7 of the Sierra - Bates book on JDBC databases and am wondering which db is best to use for practicing. Something simple but functional would be nice. MySql? I'm running Windows 10 on my laptop.

You can use Derby Db.

I used also Derby Db for chapter 15 for OCP7.

Any database will work. I wrote up a getting started with Derby blog post for readers of my book. You are using a different book, but might still find it helpful.
