The book "Jess in Action" spends three chapters explaining a web app that embeds Jess in a series of servlets. Apart from that, there are several servlet-based sites mentioned on the "Related Web Sites" page on the Jess web site; in particular, see the "Reptile Indentification Helper" link, because it includes source code for the servlet used on that site.
