"Struts In Action" or the O'Reilly Struts books are both pretty good.

Amazon brings back 173 references (not all about the software).

"Pro Jakarta Struts" looks promising. I haven't read it myself, but if Rob Harrop is an author, chances are it's a fine book.
 
It is sorta covered in the JavaRanch Style Guide.
